May depend on the policy. But no insurance company
is going to offer cover to a thief to recompense the

When demoing cars in the motor trade: I drive the motor first, when we swap
over I take keys out and only hand them to the driver when I'm in the car.

Good idea - I guess if you got out and they drove off it could be
described as deception or wilfully allowing them to drive it away, but
if they had to physically push/kick you out before driving off it
would be a different matter.
