I grew up in NYC, and when my pop took me to Aqueduct Raceway or Belmont
Park (most weekends), they always said "and they're off". I have never
been to any other horse tracks in my life; so I have no idea what is said
in other places.
Well, the Australian announcer who used to (and may still) work
California tracks used to say, "Racing".
However, to be fair, "They're Off" and "They're Off and Running" are,
by far, the most popular starts in the USA. (I think "They're Away"
is said more in England.)
