89 Nissan Pickup, 2 wheel drive, 5 speed.
Newly rebuilt transmission
New clutch (throw out bearing, the works) when the transmission was
installed.

For some reason, you have to let just about all the way out of the
clutch
before it engages. The shop says they can adjust a low pedal, but not a
high
pedal ... Is there anyway to fix this? I figured the clutch should
engage/disengage about 1/2 way through the pedal travel.

This is a cable or hydraulic type clutch?

Well... I don't see how the hydraulics could cause your problem. It
appears that you have a mechanical issue... the issue being that the
clutch is disengaging too far. Possibly clutch components were
installed incorrectly or the wrong throw-out bearing (too thick)
used??? Something bent? Just an idea...

Hmm .. well the clutch seems to work just fine, no slipping. You just
have to let the peddle out quite a bit before it engages.
