Typically split-system AC units (and that is what is in a car, after
all) freeze up due to high head pressure. Typically high head pressure
is due to low freon, as the system is pumping gas under much higher
pressure than it would liquid. Could also be valve issues, clogged
condensate drain in the evaporator, a filthy evaporator, and myriad
other things. Oh, and when you purged the system prior to installing
the new compressor did you change the receiver/dryer? Add the correct
amount of compressor oil compatible with that refrigerant?
So, in order to start your diagnosis in any meaningful way you need a
set of gauges. Add (or remove) freon until the gauges read in the
correct range for that refrigerant in that system. You will be
surprised at how much refrigerant you might need to add.
Then, get to the evaporator and check its state.
